Arugula and Beet Salad
4 cups of arugula
3 roasted beets cut into quarters ( I used Trader Joe’s pre-roasted…)
1/4 cup of crumbled goat cheese
1/4 cup golden raisins (didn’t do this, but would be soo good)
1/4 cup toasted pistachios
1/4 cup of cooked quinoa
Dressing:
2 tbsp red wine vinegar
3 tbsp olive oil
a good amount of salt and pepper
Zest of 1/2 a lemon (I’ve been zesting a lot lately, adds such great flavor without too much acidity)
1 tbsp honey
Mix arugula, beets, quinoa, goat cheese, raisins, pistachios and toss with dressing.
